分子量:C11H12O2=176.22

理化性質(zhì):幾乎無色透明油狀液體,具有蜜香和水果香氣.無旋光性。熔點:12℃。不溶于水,溶于乙醇等有機溶劑中.沸點:270-273℃, 相對密度(25℃):1.045-1.048.折光率(20℃):1.559-1.561. 含量大于99%.

主要用途:本品存在于天然蘇和香脂中,具有類似水果的香氣,氣息清而甜潤,有東方香調(diào).與香紫蘇油及天然果子精油合用效果較好,尤其用于香粉,香水,香精中更佳.食品楊梅香精中亦可使用.我國GB-2760-1996規(guī)定為允許使用的食用香料。用于著香,柿子脫澀,制作香辛料的顆粒或片劑,釀醋配料。廣泛用于配制櫻桃,桃,杏等水果型香精及白蘭地等酒用香精。亦用作膠姆糖膠基醋酸乙烯酯的溶劑,色素稀釋劑,也用于脫咖啡因的咖啡,茶和水果,蔬菜等。因沸點高,宜用于焙烤類食品.
