焦木酸(木醋酸)
化學(xué)性質(zhì):黃色酸性液體。對(duì)食品有增香、除臭及防腐作用。可溶于水和乙醇。
用途 香料兼防腐劑。用于肉類、魚類、貝類干制品的增香防腐。一般將肉類等先腌漬并風(fēng)干后,在含有1%食鹽和10%~15%木醋液的冷熏液中浸漬5~10min,取出風(fēng)干,再在熏室中加熱干燥1~2h而成。主要用于熏火腿、洋火腿、香腸(成品實(shí)際加量0.2%~0.4%)、魚肉塊、魚香腸(0.5%~1.0%)、魚糕和魚肉卷(0.1%~0.2%)等。按FAO/WHO規(guī)定,可用于沙丁魚罐頭、鰒魚罐頭和鹽水火腿等,用量視生產(chǎn)需要而定
